Jeanne Savery's Recipe for Basic Crustless Quiche

1/2 cup (1/4 pound) butter
10 eggs
1/2 cup flour
1 t. baking powder
1/4 t. salt
1 pound large-curd cottage cheese
1 pound jack cheese shredded (or Chedder or mixed, including feta)

Melt butter. Whip the eggs until fluffy and add the flour, baking powder, salt, cottage cheese, half the jack cheese, and melted butter.

Place mixture in greased 9 x 13 inch baking dish. Top with remaining cheese, maybe some parmesan.

Bake at 400 degrees for 15 min., then reduce heat to 350 degrees and continue baking for 35 to 40 min., or until top is lightly browned.

Alternatives; You can add almost anything to mix. Saute onions/slice cooked potatoes/broccoli/bacon/other meats/shrimp/left over veggies...get creative!
