Bonnie Hamre's Recipe for Sunshine Salad

All amounts are up to you, depending on the number of servings you want.

Mix together:
raw corn, either fresh or frozen (fresh is marvelous!)
chopped green pepper
chopped red and/or yellow pepper
chopped celery
chopped red onion or sweet onion
chopped cucumber
salt and pepper to taste

Add a salad dressing of your choice, either bottled or home-made. We like a slightly sweet vinaigrette or Italian dressing to counter the tartness of the vegetables if the corn is frozen. If the corn is fresh, its natural sweetness needs no additional sweetening.

Refrigerate until serving time. Stir again, add more dressing if needed, and serve.
